Raw material selection. The raw materials used are completely mature, fresh, pest-free, and rot-free peach fruits.
Raw material pretreatment. The raw materials were washed with water and brushed, washed, rinsed in 1% hydrochloric acid solution or detergent solution to remove residual pesticides, rinsed in water, and drained. Use a cut and dig machine to remove the peach kernel. The enucleated raw material was soaked in a mixture of 0.1% vitamin C and citric acid to protect the color.
Heat beaten. The fruit pieces were heated at 90-95°C for 3-5 minutes, softened, and beaten through a 0.5-mm pore sizer.
Flavor adjustment. Add sugar, citric acid, and vitamin C ingredients to the pulp. The proportion is 100 kg of peach pulp, 27% of sugar 80 kg, 0.45 kg of citric acid, and 0.07-0.2 kg of vitamin C.
Homogeneous. The homogenizer 130-160 kg/cm2 is used to homogenize the pulp particles suspended in the juice into smaller particles and evenly dispersed in the juice, thereby increasing the stability of the juice and preventing delamination.
Degassing. The fruit carries oxygen, nitrogen, and carbon dioxide gases during the extraction of the juice. Therefore, it must be degassed after homogenization. The fruit juice is sprayed as a mist to degas. The degree of vacuum in the vacuum container is 5.13-5.33 Pa and the temperature is lower than 43°C.
Sterilization cans. The juice was heated to 95°C and kept hot for 1 minute immediately after canning.
Sealed cooling. Tighten the can lid and invert the can for 1 minute. Sealed quickly after cooling to about 38 °C storage storage.
