Songhua preserved eggs are specialties in Mianzhu County of Sichuan Province. The production method is relatively simple.

Raw material formula: 100 fresh eggs, 130 grams of alkaline surface, 500 grams of lime (screening), 500 grams of plant ash, and 1 liter of water.

Production Method: 1. Select eggs. Fresh chicken and duck eggs are used.

2. Ingredients. First lime, wood and ash mix, add alkaline water, mix well and then add water to mix the material mud.

Rolling mud. Place the selected fresh eggs one by one in the slurry to make the eggs evenly glued to the slurry.

4. Ashing. Put a thick muddy egg on a layer of sugar shell or sawdust.

5. Shipment. Place the disposing eggs one by one in the altar, seal the altar mouth with mud, and place it in the room. The room temperature is maintained at 30°C on the first day, and then it can gradually cool down to 25°C. If the weather is too hot, the altar mouth can be opened for heat and sealed after 3 days.

6. Sun dried eggs. After 7 days, the eggs in the altar were taken out and dried in the sun. Otherwise, alkali damage or dissolved eggs could be caused.
