Jiaotou rice, also known as glutinous rice or chicken head rice, is a member of the Nymphaeaceae family. It is cultivated annually as an herb and aquatic vegetable, primarily for its edible kernels. According to origin, Beijiao variety is considered lower quality, while Nanluo is regarded as high quality. In terms of maturity, early maturing varieties are harvested starting in August and continue through October, while late maturing varieties are typically ready for harvest in September. Dry products can be supplied throughout the year.
Harvesting requirements and storage characteristics: When the new leaves begin to wither, the fruit stem softens, and the fruit becomes smooth and red, it is ready for harvesting using a bamboo knife. Beiyi should be harvested once during the mature period, whereas Nanzhao requires separate harvesting. After peeling, the outer skin and seeds are removed. The seeds that retain their seed coat are referred to as shell pods and are more durable for storage. Seeds from which the seed coat has been removed (mainly the endosperm) are called glutinous rice. For optimal storage, low temperature and high humidity conditions are recommended.
Storage methods: Fresh pods should be soaked in clean water and the water should be changed frequently to maintain freshness. Fresh products can also be packaged in pouches and buried in soil for preservation.
Processing methods: After harvesting, the fruits undergo threshing, seeding, shelling, drying, grading, and packaging to produce dry products. The process involves removing the outer peel, extracting the seeds, and placing them in a wooden bucket to remove the seed coat. After rinsing, the seeds turn from yellow to slightly white. Once washed, the outer skin is peeled off, completing the peeling process. Fresh glutinous rice is washed and exposed to the sun. In rainy weather, it should be dried using heat. The yield is approximately 45%.
Storage and transportation methods: Use plastic bags, wooden crates, or cardboard boxes for packaging. During transport, ensure protection from moisture and physical damage. Clams can be stored for up to one year in a cool, dry place.
Quality standards for sale:
1. Fresh pods should be full, round, and have a powdery texture.
2. Shell pods must be intact, plump, and dry, with a fresh color, free from impurities, mold, and not too hard.
3. Glutinous rice should have a white or light red color, be dry, and have complete grains. It should be free from insects, broken pieces, and dust.
Packaging options include baskets, boxes, or plastic bags.
