It is also known as glutinous rice or chicken head rice. It belongs to the Nymphaeaceae family and is a genus that has been cultivated for many years as an annual herb and aquatic vegetable, primarily grown for its edible kernels. Depending on the region of origin, Beijiao is considered lower quality, while Nanluo is regarded as high quality. In terms of maturity, early maturing varieties are ready for harvest in August and continue to be available through October, while late maturing varieties are harvested starting in September. Dry products can be supplied throughout the year.
(I) Harvesting Requirements and Storage Characteristics
When the new leaves begin to shrink, the fruit stem softens, and the fruit becomes smooth and red, it is ready for harvesting using a bamboo knife. Beiyi should be harvested once during the mature period, while Nanzhao requires separate harvesting. After peeling, the outer husk is removed along with the seeds. The seeds that retain their seed coat are called "shell pods," which are more resistant to storage. Those that have had the seed coat removed (mainly the endosperm) are referred to as "glutinous rice." For optimal storage, low temperature and high humidity conditions are recommended.
(b) Storage Methods
Fresh pods should be immersed in fresh water and the water should be changed frequently to maintain cleanliness. Fresh products such as pouches can also be packaged and buried in the soil for preservation.
(3) Processing Methods
After harvesting, the fruits go through several steps: threshing, seeding, shelling, drying, grading, and packaging to produce dry products. The process includes peeling the outer layer, removing the seeds, and placing them in a wooden bucket to remove the seed coat. After rinsing, the seeds turn from yellow to slightly white. Once washed, the outer skin is removed, completing the peeling process. The fresh glutinous rice is then washed and exposed to sunlight. If it rains, it should be dried using heat. The yield is approximately 45%.
(D) Storage and Transportation Methods
The product can be packed in plastic bags, wooden containers, or cardboard boxes. During transportation, care must be taken to prevent moisture and avoid crushing. When stored in a cool place, clams can last up to one year.
(5) Quality Standards for Sale
1. Fresh pods should be full, round, white, clear, and powdery.
2. Shell pods should be intact, plump, and dry, with a fresh color, free from impurities, mold, or stiffness.
3. Glutinous rice should have a white or light red color, be dry, and have complete grains. It should be free from insects, dead particles, and dust.
Packaging options include baskets, boxes, or plastic bags.
