Watermelons originate from Africa, where the climate is typically hot and dry. Despite being cold-sensitive, they have a thick rind and large size, which makes them somewhat resilient to temperature fluctuations, though not very resistant to long-term storage. Watermelon is particularly vulnerable to cold damage when stored below 9.5°C, leading to quality deterioration. On the other hand, storing it at higher temperatures can speed up spoilage, so finding the right balance is essential.
The ideal storage temperature for watermelon depends on the region of cultivation and the length of time it needs to be stored. Generally, lower temperatures help preserve the flavor of the flesh, but they also increase the risk of cold injury. Cold damage often manifests as small, irregular depressions on the surface of the fruit. In severe cases, the pulp becomes lighter in color, the fibers become more noticeable, and the overall taste deteriorates. These symptoms may worsen after the fruit is removed from cold storage.
Different regions have different cold damage thresholds. For example, in Shanghai, the threshold is 10°C; in Beijing, it's 12.5°C; and in Heilongjiang, it's 11°C. Storing watermelon above these temperatures helps prevent cold damage. If the storage period is short, lower temperatures are acceptable. However, if the storage time exceeds 20 days, it's best to keep the temperature above the threshold or use a pre-storage treatment at a higher temperature (such as 26°C for four days) to reduce the risk of cold injury.
For storage periods around one month, a temperature range of 14–16°C is considered safe, but proper anti-corrosion measures must be taken to avoid decay. Selecting the right variety is also crucial for successful storage. Some varieties, such as Zhongken No. 10, Fengshou No. 2, Xincheng, Migui, and Zhemi, are known for their good storability. In contrast, varieties like Zaohua, Shihong 1, Xiangmi, Su Mi, Zhongyu No. 1, and Qiong Lu et al. have poor storage qualities. Xin Hongbao is especially sensitive to cold and requires strict storage conditions to maintain its quality.
